Crispy Buffalo Cauliflower Bites with Easy Ranch Drizzle

Oven-baked cauliflower florets with a shatteringly crispy coating, tossed in tangy buffalo sauce and drizzled with a cool, herby ranch dressing. A healthier, vegetarian twist on classic buffalo wings that’s perfect for game day or a satisfying snack.

  • 1 large head of cauliflower, cut into bite-sized florets (about 6 cups)
  • 1 cup all-purpose flour (or gluten-free 1:1 blend)
  • 1/2 cup cornstarch
  • 1/4 cup rice flour (optional, for extra crispiness)
  • 1 1/2 cups cold water or buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Frank’s RedHot Original Sauce
  • 1/4 cup unsalted butter, melted (or vegan butter)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon Worcestershire sauce (or soy sauce for vegan version)
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup buttermilk
  • 1 tablespoon fresh chives, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. If you have a wire cooling rack, place it on the baking sheet.
  2. Wash the head of cauliflower and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
  3. In a large mixing bowl, whisk together the all-purpose flour, cornstarch, rice flour (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in the cold water or buttermilk while whisking continuously until you have a smooth, lump-free batter (consistency of thin pancake batter).
  4. Dip each floret into the batter, letting any excess drip off, and place it on the baking sheet. Once all the florets are coated, go back and give each one a second dip.
  5. Bake for 20 minutes. After 20 minutes, flip each floret using tongs. Bake for another 15-20 minutes, until the cauliflower is golden brown and crispy on the outside, tender on the inside (total 35-40 minutes).
  6. While the cauliflower bakes, melt the butter in a small saucepan over low heat. Remove from heat and whisk in the Frank’s RedHot, honey (if using), and Worcestershire sauce. Keep warm.
  7. In a small bowl, whisk together the Greek yogurt, buttermilk, chives, dill, garlic powder, onion powder, salt, and pepper. Add more buttermilk if needed to reach drizzling consistency. Set aside.
  8. Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the warm buffalo sauce over the top and toss gently until every floret is evenly coated.
  9. Arrange the buffalo cauliflower bites on a serving platter. Drizzle the ranch dressing over the top in a zigzag pattern. Garnish with extra fresh chives or chopped parsley if desired. Serve immediately.

Notes

For maximum crunch, don’t skip the double coating and use ice-cold liquid in the batter. Toss in sauce just before serving to keep the coating crispy. Adjust heat level by varying the amount of hot sauce. For vegan version, use vegan butter and plant-based yogurt. For gluten-free, use a 1:1 gluten-free flour blend.
