  • 24 cocktail smokies (about 12 oz / 340 g)
  • 12 strips thin-cut bacon (about 8 oz / 225 g)
  • 1/4 cup (85 g) pure honey
  • 1/4 cup (60 ml) smoky BBQ sauce
  • 2 tablespoons (25 g) brown sugar
  • 1/2 teaspoon garlic powder
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top.
  2. Wrap each cocktail smokie tightly with half a slice of bacon, securing the ends underneath. Repeat for all smokies.
  3. In a mixing bowl, whisk together honey, BBQ sauce, brown sugar, garlic powder, black pepper, and cayenne pepper if using, until smooth and sticky.
  4. Heat a large skillet over medium-high heat. Place bacon-wrapped smokies seam-side down and cook for 2-3 minutes per side until bacon starts browning and crisping. Adjust heat as needed to avoid burning.
  5. Transfer the seared smokies to the wire rack on the baking sheet. Brush each piece generously with the honey BBQ glaze.
  6. Bake in the preheated oven for 12-15 minutes until bacon is crispy and glaze is caramelized.
  7. Remove from oven, brush on a second layer of glaze, then broil on high for 1-2 minutes, watching closely to avoid burning.
  8. Let the smokies rest on the rack for 5 minutes so the glaze sets. Serve warm.

For crispiest bacon, sear before baking and use a wire rack to allow fat to drip away. Brush glaze twice, finishing with a broil for sticky, crispy texture. Avoid overcrowding the pan during searing. Use thin-cut bacon for easier wrapping and better crispness. Reheat leftovers in oven on wire rack to maintain crispiness; avoid microwave.
