  • 2 tbsp olive oil
  • 1 tbsp unsalted butter (for caramelized onion sauce)
  • 1 tsp brown sugar
  • 1/2 cup beef broth
  • 1 tbsp balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat 2 tbsp olive oil and 1 tbsp butter over medium-low heat in a sauté pan. Add thinly sliced onions and a pinch of salt. Cook slowly, stirring every 5 minutes, for about 25-30 minutes until onions are soft, deeply golden, and sweet.
  2. Sprinkle 1 tsp brown sugar over the onions and stir. Cook for an additional 2 minutes to deepen color and flavor.
  3. Deglaze the pan by adding 1/2 cup beef broth. Scrape up browned bits from the pan bottom with a wooden spoon. Let the liquid reduce by half, about 5 minutes.
  4. Stir in 1 tbsp balsamic vinegar, season with salt and pepper to taste, then remove from heat and set aside the caramelized onion sauce.
  5. Divide ground beef into 8 equal portions (about 2 oz each). Gently shape into small patties slightly wider than slider buns. Season patties generously with salt and pepper on both sides.
  6. Heat skillet over medium-high heat. Add patties and cook 2-3 minutes per side for medium doneness. Flip only once to get a nice crust. Add cheddar halves on top in the last minute, cover with lid to melt cheese.
  7. While burgers cook, melt 2 tbsp butter in another pan over medium heat. Split slider buns and place cut side down in butter. Toast until golden and crispy, about 1-2 minutes.
  8. Assemble sliders by spreading a generous spoonful of caramelized onion sauce on bottom bun, adding cheesy burger, then topping with pickles and fresh greens if using. Finish with top bun.
  9. Serve immediately while buns are crispy and cheese is gooey.

If the caramelized onion sauce thickens too much after cooling, gently reheat with a splash of broth or water to loosen it. Avoid pressing down on patties during cooking to keep them juicy.
