These crispy mini pizza bagel bites are a quick, easy, and freezer-friendly snack featuring toasted mini bagels topped with marinara sauce, melted mozzarella, and optional pepperoni. Perfect for a satisfying handheld treat with a golden, bubbly cheese crust.

  • Mini bagels (about 3 inches each), preferably plain or everything bagels
  • 1/2 cup (120 ml) marinara sauce
  • 1 cup (100 grams) shredded mozzarella cheese
  • About 20 small pepperoni slices (optional, turkey pepperoni recommended)
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 teaspoon dried oregano or Italian seasoning
  • 1 tablespoon olive oil
  • Fresh basil or parsley leaves, finely chopped (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice the mini bagels in half horizontally and lay them cut side up on the prepared baking sheet. Brush each half lightly with olive oil.
  3. Toast the bagels in the oven for about 5 minutes to dry out the surface and get them crispy.
  4. Remove the bagels from the oven. Spoon about 1 teaspoon (5 ml) of marinara sauce onto each bagel half, spreading evenly but not too thick.
  5. Sprinkle shredded mozzarella cheese generously over the sauce, about 1 tablespoon (10 grams) per bagel. Add 2–3 pepperoni slices on top if using.
  6. Sprinkle a pinch of dried oregano or Italian seasoning on each bite.
  7. Optionally, add grated Parmesan cheese and red pepper flakes for extra flavor and heat.
  8. Bake the bagel bites at 400°F (200°C) for 8–10 minutes until the cheese is melted, bubbly, and the edges are golden brown. Watch closely after 8 minutes to avoid burning.
  9. Let the bites cool for a few minutes before serving. For freezing, cool completely, freeze in a single layer on a baking sheet, then transfer to a freezer bag.

Notes

Pre-toast the bagels to prevent sogginess. Use fresh shredded mozzarella for best melting. Freeze bites flat on a tray before bagging to avoid sticking. Reheat frozen bites in the oven at 375°F for 12–15 minutes, flipping halfway. Broil for last 1–2 minutes for extra crispiness but watch carefully to avoid burning.
