  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Pat each pork chop dry with paper towels. Season both sides with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. In a shallow bowl, whisk together the egg and Dijon mustard until well combined. In another shallow bowl, mix the grated Parmesan, panko breadcrumbs, garlic powder, onion powder, and smoked paprika.
  3. Working with one pork chop at a time, dip it into the egg mixture, letting any excess drip off. Then press it firmly into the Parmesan-panko mixture, making sure both sides are well coated. Place the coated chops on a plate.
  4. Place a large skillet over medium heat and add the olive oil and butter. Let the butter melt and start to foam.
  5. Carefully place the coated chops in the hot skillet, making sure not to crowd them. Cook for 4-5 minutes on the first side, without moving them. Flip and cook for another 4-5 minutes on the second side.
  6. Check for doneness with a meat thermometer (internal temperature of 145°F/63°C).
  7. Transfer the cooked pork chops to a cutting board or plate and let them rest for 5 minutes. Sprinkle with fresh parsley and serve with lemon wedges.

Notes

Don’t skip patting the pork chops dry—moisture is the enemy of crispiness. Use medium heat to avoid burning the coating. Let the chops rest for 5 minutes after cooking to redistribute juices. For best results, use freshly grated Parmesan and panko breadcrumbs.
