Crispy Smash Burger Tacos

Quick and easy crispy smash burger patties cooked in a cast iron skillet, folded into warm tortillas for a satisfying taco meal with juicy, crunchy edges.

  • 1 lb (450 g) ground beef (80/20 blend recommended)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)
  • 68 small flour tortillas (6-inch / 15 cm)
  • 46 cheese slices (American, cheddar, or favorite)
  • 12 tbsp vegetable oil or butter
  • Optional toppings: shredded lettuce, diced tomatoes, pickles, sliced jalapeños, mayo or spicy sauce

Instructions

  1. In a mixing bowl, gently combine ground beef with kosher salt, black pepper, and optional garlic and onion powder. Avoid overmixing.
  2. Heat a cast iron skillet over medium-high heat. Add vegetable oil or butter and let it shimmer but not smoke.
  3. Divide the beef into 6 equal portions (about 3 oz / 85 g each). Place a portion in the skillet and press down firmly with a spatula to create a thin patty about 1/4 inch (6 mm) thick. Cook in batches if needed.
  4. Cook the patty undisturbed for 2-3 minutes until edges are deeply browned and crispy.
  5. Flip each patty gently, top immediately with a cheese slice, and cook another 1-2 minutes until cheese melts and patty is cooked through.
  6. Warm tortillas in a separate dry skillet or wrap in foil and heat in the oven at 350°F (175°C) for 5 minutes. For extra crispiness, lightly brush tortillas with oil and toast briefly in the cast iron skillet after patties are done.
  7. Assemble tacos by placing each crispy patty in a warm tortilla and adding desired toppings like shredded lettuce, diced tomatoes, pickles, jalapeños, and a drizzle of mayo or spicy sauce.

Notes

Press patties firmly but keep about 1/4 inch thickness for crispy edges without drying out. Preheat skillet well to create Maillard reaction. Flip patties only once. Blot tortillas with paper towels before crisping to prevent sogginess. For dairy-free, omit cheese or use plant-based alternative. Corn tortillas can be used for gluten-free option but are less flexible.
