  • 8 oz cream cheese, softened
  • 1/2 cup shredded sharp cheddar cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1215 slices thin-cut bacon

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  2. Wash and dry jalapenos. Cut each in half lengthwise and scrape out seeds and membranes with a small spoon.
  3. In a small bowl, combine softened cream cheese, shredded cheddar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
  4. Generously fill each jalapeno half with the cream cheese mixture.
  5. Wrap each stuffed jalapeno half with a slice of bacon, starting at one end and overlapping slightly. Trim excess bacon if needed.
  6. Place wrapped jalapenos seam-side down on the wire rack, leaving space between each.
  7. Bake for 15-20 minutes, until bacon is deeply golden and crispy and jalapeno is tender.
  8. Let cool on the rack for 5 minutes before serving. Serve warm.

Notes

For best results, use thin-cut bacon and a wire rack to ensure crispy bacon. Wear gloves when handling jalapenos to avoid burning your hands. Let cream cheese come to room temperature for easy mixing. For a milder version, remove all seeds and membranes or use mini sweet peppers. For a spicier kick, use pepper jack cheese instead of cheddar.
