A rich, creamy, and comforting cheeseburger soup made in the slow cooker with frozen hash browns, ground beef, and cheddar cheese. This dump-and-go meal is perfect for busy weeknights and delivers all the flavors of a classic cheeseburger in a warm, slurpable bowl.

Ingredients

Scale
  • 1 pound ground beef (80/20 or 85/15)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 (10.5-ounce) can condensed cheddar cheese soup
  • 1 (30-ounce) bag frozen shredded hash browns
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk or heavy cream
  • 2 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: diced dill pickles, ketchup, crispy bacon bits, chopped green onions

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 6 to 8 minutes. Leave about a tablespoon of fat in the pan.
  2. Add the diced onion to the skillet and cook for 3 to 4 minutes until translucent. Add the minced garlic and cook for 30 seconds more until fragrant.
  3. Transfer the beef and onion mixture to a 6-quart or larger slow cooker using a slotted spoon.
  4. Pour in the beef broth, then stir in the Dijon mustard, Worcestershire sauce, and smoked paprika.
  5. Add the entire bag of frozen shredded hash browns to the slow cooker. Do not thaw them first. Stir to combine.
  6. Spoon the condensed cheddar cheese soup over the top without stirring it in.
  7. Cover and cook on low for 6 hours or on high for 3 to 4 hours, until the hash browns are tender and the soup is thick and creamy.
  8. About 30 minutes before serving, stir the soup well. Add the shredded cheddar cheese and milk or cream, stirring until the cheese is fully melted and the soup is smooth. Season with salt and pepper to taste.
  9. Turn the slow cooker to warm and let the soup rest for 10 to 15 minutes before serving.
  10. Ladle into bowls and serve with desired toppings.

Notes

For a gluten-free version, use certified gluten-free Worcestershire sauce and a gluten-free condensed soup. For a dairy-free version, swap butter for olive oil, use dairy-free shredded cheese, and replace milk with unsweetened oat milk or canned coconut milk. Add cheese at the end off the heat to prevent graininess. Shred your own cheese for the smoothest melt.
