These brownies feature gooey layers of three kinds of chocolate, delivering a rich, fudgy texture and intense chocolate flavor perfect for any occasion.

Ingredients

Scale
  • 1 cup (2 sticks, 227 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (125 g) all-purpose flour, sifted
  • 3/4 cup (65 g) unsweetened cocoa powder, sifted
  • 1/2 teaspoon salt
  • 1 cup (175 g) semisweet chocolate chips
  • 1/2 cup (90 g) bittersweet chocolate chunks
  • 1/2 cup (90 g) white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Melt the butter in a microwave-safe bowl in 30-second increments until fully melted. Let cool slightly.
  3. In a large bowl, whisk granulated sugar and eggs together until thick and pale, about 2-3 minutes. Stir in vanilla extract.
  4. Gradually pour the cooled melted butter into the sugar-egg mixture, stirring gently to combine without overmixing.
  5. Sift together the all-purpose flour, cocoa powder, and salt in a separate bowl.
  6. Fold the dry ingredients into the wet ingredients carefully with a spatula until just combined, avoiding overmixing.
  7. Fold in the semisweet chocolate chips, bittersweet chocolate chunks, and white chocolate chips.
  8. Pour the batter evenly into the prepared pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes. Check at 30 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but no wet batter. Bake a few more minutes if needed, but avoid overbaking.
  10. Cool the brownies completely in the pan on a wire rack for at least 45 minutes before slicing.

Notes

For extra gooey brownies, slightly underbake by 1-2 minutes but do not skip the cooling time. Use room temperature eggs for better batter texture. Avoid overmixing to keep brownies tender. Let brownies cool completely before slicing for clean cuts. Variations include adding nuts, cinnamon, cayenne, or making vegan substitutions.
