A quick and delicious ground turkey taco skillet made with a homemade seasoning blend, black beans, corn, and diced tomatoes. Ready in under 20 minutes, this weeknight dinner is perfect for busy families and is packed with flavor.

  • 1 lb ground turkey (93/7 lean-to-fat ratio)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chiles (undrained)
  • ½ cup corn kernels (frozen, no need to thaw)
  • ¼ cup chicken broth or water

Instructions

  1. Prep your ingredients first: dice the onion and bell pepper, mince the garlic, drain and rinse the black beans.
  2. Heat the skillet over medium-high heat. Add the olive oil and let it shimmer for about 30 seconds.
  3. Add the ground turkey. Break it up with your spoon and let it cook undisturbed for 3-4 minutes to create a brown crust.
  4. Break the turkey into smaller pieces and continue cooking until no pink remains, about 3-4 more minutes. Drain excess liquid if needed.
  5. Add the diced onion and bell pepper. Cook for 2-3 minutes until softened.
  6. Stir in the minced garlic and cook for 30 seconds until fragrant.
  7. Add the homemade taco seasoning (chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, black pepper, cayenne). Stir to coat and cook for 1 minute to toast the spices.
  8. Pour in the diced tomatoes with green chiles (undrained), black beans, corn, and chicken broth. Stir until well combined.
  9. Bring the mixture to a simmer, then reduce heat to medium-low. Let it bubble gently for 5-7 minutes, stirring occasionally, until slightly thickened.
  10. Taste and adjust seasoning as needed. Add a squeeze of fresh lime juice if desired.
  11. Remove from heat and let rest for 2-3 minutes.
  12. Serve immediately with desired toppings (shredded cheese, sour cream, cilantro, avocado, lime wedges, hot sauce).

Notes

For best texture, use 93/7 ground turkey (not extra-lean). Toast the spices for 1 minute to enhance flavor. Let the skillet rest for 2-3 minutes before serving. Leftovers taste even better the next day. Freezes well for up to 3 months.
