A quick and delicious weeknight dinner featuring honey garlic glazed salmon and roasted vegetables, all cooked on a single sheet pan in just 20 minutes. Perfect for busy nights when you need a healthy, flavorful meal with minimal cleanup.

  • 3 tablespoons low-sodium soy sauce (or tamari for gluten-free)
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil or avocado oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • Pinch of red pepper flakes (optional)
  • 4 salmon fillets (about 6 ounces each)
  • 3 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 medium zucchini, halved and sliced
  • 1 small red onion, cut into wedges
  • 2 tablespoons olive oil (for vegetables)
  • Salt and black pepper, to taste
  • Sesame seeds and sliced green onions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line your baking sheet with parchment paper or foil for easy cleanup.
  2. Make the honey garlic glaze: In a small bowl, whisk together the honey, soy sauce, minced garlic, olive oil, rice vinegar, grated ginger (if using), and red pepper flakes. Set aside about 2 tablespoons of the glaze for brushing later.
  3. Prep the vegetables: In a large bowl, toss the broccoli florets, sliced bell pepper, zucchini, and red onion wedges with 2 tablespoons of olive oil. Season generously with salt and black pepper. Spread the vegetables evenly on one half of the prepared baking sheet, leaving room for the salmon.
  4. Season the salmon: Pat the salmon fillets dry with paper towels. Place them skin-side down on the other half of the baking sheet. Brush each fillet generously with the honey garlic glaze, reserving the extra for later.
  5. Roast everything together: Place the baking sheet in the preheated oven and roast for 12-15 minutes, depending on the thickness of your salmon. Start checking at the 10-minute mark. The salmon should be opaque and flake easily with a fork, and the vegetables should be tender with caramelized edges.
  6. Brush with remaining glaze: About 2 minutes before the salmon is done, carefully remove the pan from the oven and brush the fillets with the reserved glaze. Return to the oven to let it set and get beautifully sticky.
  7. Garnish and serve: Sprinkle with sesame seeds and sliced green onions. Serve immediately, right off the sheet pan if desired.

Notes

Don’t overcrowd the pan to ensure proper roasting. Pat salmon dry for better glaze adhesion. Watch the glaze carefully as honey can burn quickly. Let salmon rest at room temperature for 10-15 minutes before cooking for even cooking. Line the pan with parchment paper for easy cleanup.
