A quick and simple stovetop version of Marry Me Pasta with a creamy, tangy, and slightly spicy sun-dried tomato sauce, made with just five ingredients and no oven required.

  • 1 pound boneless, skinless chicken breasts, thinly sliced
  • 1/3 cup sun-dried tomatoes (preferably oil-packed), chopped
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 12 ounces pasta (fettuccine or linguine preferred)
  • Salt, to taste
  • Black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces of pasta and cook according to package instructions until al dente (usually 8-10 minutes). Reserve 1 cup of pasta water before draining.
  2. While pasta cooks, heat a large skillet over medium heat. Add a splash of olive oil or some oil from the sun-dried tomatoes. Season the thinly sliced chicken breasts with salt and pepper. Cook for 4-5 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the sun-dried tomatoes and sauté for 1-2 minutes until fragrant. Pour in 1 cup heavy cream and bring to a gentle simmer, stirring frequently to prevent scorching.
  4. Stir in 1/2 cup freshly grated Parmesan cheese until melted and smooth. If sauce is too thick, add reserved pasta water a few tablespoons at a time until desired consistency is reached. Season with salt, black pepper, and red pepper flakes to taste.
  5. Return cooked chicken to the skillet and nestle into the sauce. Add drained pasta and toss gently to coat. Let simmer for another minute to marry flavors.
  6. Serve immediately with extra Parmesan cheese and a sprinkle of fresh basil or parsley if desired.

Notes

Do not overcook the chicken slices; they finish cooking in the sauce. Stir sauce frequently to prevent curdling and keep it silky. Use oil-packed sun-dried tomatoes for best flavor. Reserve pasta water to adjust sauce consistency. Freshly grated Parmesan melts better than pre-grated.
