  • 1/2 cup (50g) vanilla protein powder (whey or plant-based)
  • 1 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1/2 cup (125g) creamy almond butter (natural, unsweetened)
  • 1/4 cup (85g) honey or maple syrup
  • 1/3 cup (60g) dark chocolate chips (60-70% cocoa)
  • 1 tablespoon chia seeds or ground flaxseeds (optional)

Instructions

  1. Combine dry ingredients: In a mixing bowl, add rolled oats, vanilla protein powder, ground cinnamon, and sea salt. Stir to mix evenly, about 2 minutes.
  2. Add wet ingredients: Stir in creamy almond butter and honey or maple syrup. Mix well until the mixture starts to come together and looks sticky and slightly crumbly. If too dry, add a teaspoon of water or almond milk.
  3. Fold in chocolate chips gently to avoid melting.
  4. If using, add chia seeds or ground flaxseeds and mix gently.
  5. Shape the mixture into balls about 1 inch (2.5 cm) in diameter using hands or a small cookie scoop, yielding roughly 15-18 balls.
  6. Place the balls on a baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  7. Serve immediately after chilling or store in an airtight container in the fridge for up to a week.

Notes

Use room temperature almond butter for easier mixing. Avoid overmixing chocolate chips to keep them intact. Chill mixture before shaping if too sticky. For crunch, add chopped nuts or shredded coconut. Nut-free option: substitute almond butter with sunflower seed butter and use oat or rice protein powder. Optional baking: bake at 325°F (160°C) for 10 minutes for firmer texture.
