This easy apple crisp with oat crumble topping is a warm, comforting dessert made with simple ingredients. It features a jammy apple filling and a crunchy, buttery oat topping that comes together in about 15 minutes of prep.

Ingredients

Scale
  • 6 medium apples (about 2 pounds or 900g), a mix of Granny Smith and Honeycrisp, peeled, cored, and sliced ¼-inch thick
  • ⅓ cup (65g) granulated sugar
  • 2 tablespoons (25g) light brown sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice, freshly squeezed
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup (90g) old-fashioned rolled oats
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g or 1 stick) unsalted butter, cold, cut into small cubes
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Lightly butter a 9×13-inch baking dish.
  2. Prepare the apples: Peel, core, and slice apples into ¼-inch thick pieces.
  3. Make the filling: In a medium bowl, whisk together ⅓ cup granulated sugar, 2 tablespoons brown sugar, 2 tablespoons flour, 1½ teaspoons cinnamon, ¼ teaspoon nutmeg, and ¼ teaspoon salt. Add sliced apples, lemon juice, and vanilla. Toss until every apple slice is coated.
  4. Pour the filling into the prepared dish and spread into an even layer.
  5. Make the oat crumble topping: In a large bowl, combine rolled oats, ¾ cup flour, ½ cup packed brown sugar, ¼ cup granulated sugar, 1 teaspoon cinnamon, and ¼ teaspoon salt. Whisk until evenly distributed.
  6. Cut in the cold butter using a pastry cutter or two forks until the mixture resembles coarse meal with some pea-sized butter pieces. Stir in vanilla extract.
  7. Sprinkle the oat crumble topping evenly over the apples. Do not press down.
  8. Place the dish on a baking sheet and bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly around the edges. If browning too quickly after 30 minutes, tent loosely with foil.
  9. Check for doneness: Apples should be tender when pierced with a fork. If still firm, bake another 5-10 minutes.
  10. Cool on a wire rack for at least 15-20 minutes before serving.

Notes

Use cold butter for the crumble topping. Do not overmix the topping. Let the crisp rest for 15-20 minutes after baking to allow the filling to set. For best texture, use a mix of firm tart apples (like Granny Smith) and sweeter apples (like Honeycrisp). Avoid quick oats; old-fashioned rolled oats are essential for a crispy topping.
