Instructions

  1. Preheat oven to 350°F. Line a 9×13 baking dish with parchment paper, leaving overhang on long sides. Lightly grease parchment with nonstick spray or butter.
  2. Make the crust layer: In a medium bowl, combine yellow cake mix and 1/2 cup melted butter. Stir with a fork until mixture resembles coarse crumbs. Reserve about 1/2 cup of this mixture for topping. Press the rest firmly into the bottom of the prepared baking dish.
  3. Prepare the peach filling: In a large bowl, gently toss sliced peaches with 1 cup packed brown sugar, cinnamon, cornstarch, vanilla extract, and salt. Let sit for 5 minutes. Do not drain the liquid.
  4. Assemble the bars: Spoon peach mixture evenly over the pressed crust layer. Spread peaches in a single layer as much as possible. Pour any remaining juices over the top.
