A simple and comforting overnight French toast bake using cinnamon rolls that delivers a gooey, custardy, and sweet breakfast with minimal effort.

Ingredients

Scale
  • 1 (12-count) package of cinnamon rolls (with icing included)
  • 6 large eggs, room temperature
  • 2 cups whole milk (or 2% milk or dairy-free alternatives like almond milk)
  • 1/4 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Optional: chopped pecans or walnuts
  • Optional: pinch of nutmeg

Instructions

  1. Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cut each cinnamon roll into quarters.
  3. Arrange the cinnamon roll pieces evenly in the baking dish without crowding.
  4. In a large mixing bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt until smooth and slightly frothy.
  5. Pour the custard mixture evenly over the cinnamon roll pieces, gently pressing down any floating pieces to soak fully.
  6. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  7. Preheat the oven to 350°F (175°C). Remove the dish from the fridge and let it sit at room temperature for 10 minutes (optional).
  8. Bake uncovered for 40-45 minutes until custard is set and the top is golden brown and slightly crisp. Tent with foil if browning too fast.
  9. Remove from oven and drizzle the included cinnamon roll icing over the top while still warm.
  10. Let cool for 5 minutes before serving warm.

Notes

Soaking overnight is key for a tender custard texture. If baking time is too long or top browns too fast, tent with foil after 30 minutes. Use whole milk for creaminess or dairy-free milk for alternatives. Avoid overcrowding cinnamon roll pieces for even soaking.
