This Easy Copycat Iced Pumpkin Cream Cold Brew is a simple, budget-friendly coffee drink that tastes just like the Starbucks version. With a fluffy, spiced pumpkin cream topping over smooth cold brew, it’s the perfect fall treat to make at home.

  • 1/2 cup heavy cream
  • 3 tablespoons sweetened condensed milk
  • 2 tablespoons pumpkin puree
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup cold brew coffee per serving
  • Ice

Instructions

  1. If making homemade cold brew, combine 1 cup coarsely ground coffee with 4 cups cold water in a large jar or pitcher. Stir gently, cover, and let steep at room temperature for 12-24 hours. Strain through a fine-mesh strainer lined with a coffee filter or cheesecloth. Store in the fridge for up to two weeks.
  2. In a medium bowl or jar, combine heavy cream, sweetened condensed milk, pumpkin puree, pumpkin pie spice, vanilla extract, and a pinch of salt. Whisk until fully incorporated and no orange streaks remain.
  3. Using a milk frother or hand mixer, whip the mixture for 30 seconds to 1 minute until thick and fluffy, with soft peaks. Alternatively, whisk by hand for 2-3 minutes.
  4. Fill a tall glass completely with ice. Pour cold brew over the ice, filling the glass about three-quarters full.
  5. Slowly pour the pumpkin cream over the back of a spoon held just above the surface of the cold brew to create a floating layer. Add about an inch of cream.
  6. Enjoy immediately. Stir if desired, or drink through the cream layer.

Notes

Chill your bowl and cream before whipping for fluffier results. Don’t overwhip the cream; it should be thick but pourable. The pumpkin cream can be made up to 5 days in advance and stored in the fridge. Adjust sweetness by adding more or less sweetened condensed milk. For dairy-free, use full-fat coconut cream and dairy-free sweetened condensed milk.
