A quick and easy one-pan teriyaki salmon dinner with crispy skin and roasted vegetables, perfect for weeknight meals.

  • 4 salmon fillets (skin-on, about 6 oz / 170 g each), fresh or thawed
  • 1/4 cup (60 ml) low-sodium soy sauce
  • 2 tbsp (30 ml) honey
  • 1 tbsp (15 ml) fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) rice vinegar
  • 1 tsp (5 ml) sesame oil
  • Black pepper, to taste
  • 3 cups (300 g) broccoli florets, fresh or frozen
  • 2 medium carrots, peeled and cut into sticks
  • 2 tbsp (30 ml) olive oil
  • Salt, to taste
  • 1/4 tsp chili flakes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed sheet pan with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, grated ginger, and minced garlic until smooth and shiny.
  3. Toss broccoli florets and carrot sticks with olive oil, salt, and optional chili flakes. Spread the vegetables evenly on one side of the sheet pan.
  4. Pat salmon fillets dry with paper towels. Place them skin-side down on the empty side of the sheet pan. Brush each fillet generously with the teriyaki glaze, reserving about 2 tbsp for later.
  5. Roast in the oven for 12-15 minutes until salmon is opaque and flakes easily, and vegetables are tender with some charred edges.
  6. Switch oven to broil on high. Brush salmon with reserved glaze and broil for 2-3 minutes until skin is crispy and glaze caramelizes. Watch carefully to prevent burning.
  7. Remove from oven and let salmon rest for 2 minutes. Serve salmon with roasted vegetables, spooning any pan juices over the top.

Notes

Dry salmon skin thoroughly before cooking to ensure crispiness. Use parchment or silicone mat to prevent sticking. Broil carefully to caramelize glaze without burning. Toss vegetables halfway through cooking if uneven roasting occurs. Adjust soy sauce and honey to taste for glaze balance. Toasted sesame seeds can be sprinkled on top before serving for extra texture.
