This creamy, spicy, and utterly addictive buffalo chicken dip is made in a crockpot with minimal effort. Perfect for game day, parties, or any gathering, it’s a crowd-pleaser that disappears every time.

  • 2 pounds boneless, skinless chicken breasts (about 34 breasts)
  • 16 ounces cream cheese, softened (two standard blocks)
  • 1 cup ranch dressing (or blue cheese dressing)
  • 1 cup buffalo hot sauce (like Frank’s RedHot)
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1/2 cup crumbled blue cheese (optional)
  • Tortilla chips (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Additional hot sauce for drizzling (optional)

Instructions

  1. If using raw chicken breasts, place them in the bottom of your crockpot. Season lightly with salt and pepper. If using rotisserie chicken, shred it first and set aside.
  2. In a medium mixing bowl, combine the softened cream cheese, ranch dressing, and buffalo hot sauce. Use a hand mixer or sturdy whisk to blend until smooth.
  3. Pour the creamy mixture over the chicken in the crockpot. Add the shredded cheddar cheese and crumbled blue cheese (if using). Stir to combine.
  4. Cover the crockpot and cook on low for 3-4 hours, or on high for 1.5-2 hours. Stir halfway through cooking.
  5. Once the chicken is cooked through (internal temperature of 165°F), shred it using two forks or a hand mixer on low speed.
  6. Stir everything together. Taste and adjust seasoning, adding more hot sauce if desired.
  7. Sprinkle extra shredded cheddar cheese on top, cover, and cook for another 10-15 minutes until melted and bubbly. Switch to ‘warm’ setting and serve with tortilla chips, celery, and carrot sticks.

Notes

Let cream cheese sit at room temperature for 30 minutes before starting. Use a slow cooker liner for easy cleanup. Stir halfway through cooking. Keep dip on ‘warm’ setting after cooking to prevent separation. For less spice, use 1/2 cup buffalo sauce. For more heat, add cayenne pepper or extra hot sauce.
