This creamy, spicy buffalo chicken dip is made with just five ingredients and a slow cooker. Perfect for game day, potlucks, or any gathering, it’s a crowd-pleaser that requires minimal effort.

  • 2 (12.5 oz) cans chunk chicken breast, drained
  • 16 oz cream cheese, softened and cubed
  • 1 cup ranch dressing
  • 1/2 cup buffalo wing sauce
  • 1 1/2 cups shredded sharp cheddar cheese
  • Tortilla chips, for serving (optional)
  • Celery sticks and carrot sticks, for serving (optional)
  • Crusty bread or baguette slices, for serving (optional)

Instructions

  1. Prep the chicken: Open both cans of chunk chicken breast and dump them into a colander. Rinse quickly with cold water, then drain well. Use your hands or a fork to break the chicken into smaller shreds. Set aside.
  2. Cube the cream cheese: Cut the softened cream cheese into small cubes, about 1-inch pieces.
  3. Layer the ingredients in the crockpot: Place the cubed cream cheese in the bottom of the slow cooker. Add the shredded chicken on top, then pour the ranch dressing and buffalo wing sauce over everything. Sprinkle the shredded cheddar cheese on top. Do not stir.
  4. Cook on low: Cover and cook on LOW for 2 to 2.5 hours. After about 1 hour, give it a good stir.
  5. Stir and finish: After 2 hours, stir everything together until smooth and well combined. If it looks thin, cook uncovered for another 30 minutes to thicken. If too thick, stir in a splash of milk or extra ranch dressing.
  6. Adjust the seasoning: Taste and add more buffalo sauce for heat or more ranch for creaminess.
  7. Keep warm for serving: Switch the crockpot to WARM or keep on LOW. Stir in a splash of milk if it thickens.

Notes

Drain the canned chicken well to avoid watery dip. Use full-fat cream cheese for best texture. Shred your own cheese for smoother melting. The dip can be made a day ahead and reheated.
