Instructions

  1. Pat the chicken thighs dry with paper towels and trim excess fat if desired. Place them in the bottom of a 6-quart or larger slow cooker in a single layer.
  2. In a small mixing bowl, whisk together honey, low-sodium soy sauce, tomato paste, minced garlic, rice vinegar, sriracha, and ground ginger until smooth.
  3. Pour the sauce evenly over the chicken thighs. Cover and cook on LOW for 5-6 hours or on HIGH for 3-4 hours, until chicken is fork-tender and reaches an internal temperature of 165°F.
  4. Using tongs, carefully transfer the cooked chicken to a plate or cutting board. Tent loosely with foil to keep warm.
  5. Turn the slow cooker to HIGH. In a small bowl, whisk together cornstarch and water to form a slurry. Pour the slurry into the hot sauce, whisking constantly. Cook for 2-3 minutes until the sauce thickens and becomes glossy.
  6. Return the chicken to the slow cooker and spoon the thickened sauce over the top. Let sit for 1-2 minutes to re-warm.
