Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper, leaving some overhang for easy bar removal later.
  2. In a medium bowl, toss the sliced peaches with granulated sugar, lemon juice, cornstarch, and vanilla extract. Stir gently until the peaches are evenly coated. Set aside to macerate for 10 minutes.
  3. In a large bowl, combine the all-purpose flour, brown sugar, cinnamon, salt, and optional nutmeg and oats. Add the cold, cubed butter.
  4. Cut the butter into the dry ingredients using a pastry cutter, fork, or your fingertips, until the mixture resembles coarse crumbs with some pea-sized chunks.
  5. Press half of the crumble mixture evenly into the bottom of your prepared baking pan to form the crust base.
