  • 2 cups broccoli crowns, cut into small florets
  • 1 cup cauliflower florets, cut into small pieces
  • 1 large red bell pepper, sliced into thin strips
  • 1 large yellow bell pepper, sliced into thin strips
  • 1 large orange bell pepper, sliced into thin strips
  • 3 medium carrots, peeled and cut into sticks
  • 4 celery stalks, cut into 3-inch sticks
  • 1 large cucumber, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • ½ cup black olives, pitted and halved
  • 1 cup sour cream
  • ½ cup mayonnaise
  • ¼ cup buttermilk
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, freshly ground
  • 1 tablespoon lemon juice, freshly squeezed

Instructions

  1. Make the Ranch Dip: In a small mixing bowl, whisk together sour cream, mayonnaise, and buttermilk until smooth. Add fresh dill, parsley, garlic powder, onion powder, salt, black pepper, and lemon juice. Whisk until well combined. Cover and refrigerate for at least 15 minutes.
  2. Prep the Vegetables: Wash all vegetables. Cut broccoli and cauliflower into small florets. Slice bell peppers into thin strips (about ¼ inch wide). Peel carrots and cut into 3-inch sticks. Cut celery into similar-sized sticks. Slice cucumber into rounds (about ¼ inch thick). Halve cherry tomatoes. Set aside.
  3. Assemble the Spider Web: Place the small bowl of ranch dip in the center of a large round platter. Arrange cucumber rounds in a circle about 3 inches from the dip bowl. Create a larger circle of carrot sticks about 2 inches outside the cucumber ring. Continue with a circle of celery sticks, then another circle of bell pepper strips, creating concentric rings.
  4. Create the Spider: Arrange broccoli florets in a cluster on top of the ranch dip bowl to form the spider’s body. Use black olive halves for the eyes. Take 8 thin strips of red bell pepper and arrange them around the broccoli body, extending outward onto the veggie rings to look like spider legs.
  5. Fill in the Gaps: Use remaining vegetables to fill empty spaces on the platter. Scatter cherry tomatoes and cauliflower florets around the web. Add extra olive halves for texture.
  6. Final Touch: Arrange a few extra carrot sticks like rays coming out from the center to mimic web strands. Sprinkle fresh dill over the top. Serve immediately or cover and refrigerate until ready to serve.

Notes

For best results, chill the dip for at least 15 minutes before serving. Vegetables can be prepped a day in advance and stored separately. Keep dip separate until serving to prevent sogginess. For a dairy-free version, use vegan sour cream and mayonnaise. The dip tastes even better the next day.
