A quick and easy iced coffee topped with a creamy, pumpkin-spiced cold foam made with simple ingredients. Perfect for fall mornings, this recipe requires no fancy equipment and comes together in under five minutes.

Ingredients

Scale
  • 2 tablespoons pumpkin puree (100% pure, not pumpkin pie filling)
  • ¼ cup heavy cream (or heavy whipping cream)
  • 1 tablespoon maple syrup (or honey/agave)
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 1 cup strong brewed coffee, chilled (cold brew or double-strength drip)
  • Ice cubes (enough to fill glass)
  • Optional garnish: cinnamon or pumpkin pie spice, extra maple syrup drizzle

Instructions

  1. Brew and chill your coffee. If using hot coffee, brew ahead and let cool to room temperature, then refrigerate until cold. Alternatively, use cold brew concentrate diluted with water or milk.
  2. In a jar with a tight-fitting lid, combine 2 tablespoons pumpkin puree, ¼ cup heavy cream, 1 tablespoon maple syrup, ½ teaspoon pumpkin pie spice, and ½ teaspoon vanilla extract. Screw the lid on tightly.
  3. Shake vigorously for 30 to 45 seconds until the mixture thickens and doubles in volume. If still runny, shake another 15 seconds.
  4. Fill a tall glass with ice cubes. Pour the cold coffee over the ice, leaving about an inch of space at the top.
  5. Spoon or pour the cold foam over the coffee. Do not stir—let it slowly melt into the coffee as you drink.
  6. Garnish with a sprinkle of pumpkin pie spice or cinnamon, and a drizzle of maple syrup if desired. Serve immediately with a straw or spoon.

Notes

Use cold ingredients for best foam. Shake vigorously. Taste foam before pouring to adjust sweetness/spice. Do not overfill glass with coffee and ice—leave room for foam. Foam is best immediately; if it sits, it will separate. For thicker foam, use cold heavy cream straight from the fridge. The pumpkin-cream mixture (without cream) can be stored in the fridge for up to a week.
