  • 6 oz prosciutto, thinly sliced

  • 4 oz mozzarella pearls
  • 1 cup grapes, halved (red or green)
  • 1/2 cup pickled vegetables (cornichons, pickled red onions, or pickled peppers)
  • 1/2 cup pitted olives (Castelvetrano or kalamata)
  • 1/4 cup almonds or Marcona almonds
  • Fresh rosemary sprigs (optional, for garnish)

Instructions

  1. Prep your ingredients (5 minutes): Cube the cheddar cheese into small pieces, about 1/2 inch each. Halve the grapes. If your salami slices are large, cut them into quarters. Prosciutto slices can be left whole or torn in half for a more rustic look. Set everything in small bowls.
  2. Set up your assembly station (2 minutes): Lay out your cones on the serving tray in rows, leaving about an inch of space between each cone.
  3. Start with the base layer (3 minutes): Drop a few almonds or a small pile of pickled vegetables into the bottom of each cone to prevent heavier ingredients from settling too low and breaking the cone.
  4. Add the meats (3 minutes): Fold or roll a slice of salami and tuck it into the cone. Follow with a piece of prosciutto, letting a little bit peek out over the top. Add a slice of pepperoni on top. The meats should fill about halfway up the cone.
