  • ½ cup pumpkin puree (100% pure, not pumpkin pie filling)
  • ½ cup vanilla or unflavored protein powder
  • ⅓ cup creamy almond butter (natural, with oil separation)
  • 1 cup rolled oats
  • ½ teaspoon pumpkin pie spice (optional)
  • 2 tablespoons dark chocolate chips (optional)
  • 2 tablespoons shredded coconut (optional)

Instructions

  1. In a large mixing bowl, combine the pumpkin puree and almond butter. Stir until fully incorporated and uniform in color.
  2. Sprinkle the protein powder over the wet mixture. Stir vigorously until the powder is fully absorbed and the dough thickens.
  3. Add the rolled oats in two batches, stirring after each addition until evenly distributed. The dough should be thick and slightly crumbly but hold together when pressed.
  4. Fold in any optional add-ins like pumpkin pie spice, chocolate chips, or shredded coconut.
  5. If the dough is too soft or sticky, chill in the refrigerator for 15-20 minutes.
  6. Using your hands or a 1-tablespoon cookie scoop, portion the dough into balls about 1 inch in diameter. Roll between your palms until smooth.
  7. Place the balls on a baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  8. Store in an airtight container in the refrigerator for up to 10 days, or freeze for up to 3 months.

Notes

Use 100% pure pumpkin puree, not pumpkin pie filling. If dough is too dry, add almond butter 1 tablespoon at a time. If too sticky, add more oats or chill the dough. Wet hands with cold water for easier rolling. Flavor improves after a day in the fridge.
