  • 1/2 cup fresh salsa
  • 1/4 cup shredded cheddar or Mexican blend cheese (optional)
  • 2 tablespoons chopped green onions
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 1 teaspoon fresh lime juice

Instructions

  1. Place 1 cup of cooked rice in a microwave-safe bowl and fluff gently with a fork.
  2. Add 1 cup of drained black beans over the rice, then spoon 1/2 cup of fresh salsa on top.
  3. Sprinkle 1/2 teaspoon ground cumin, 1/4 teaspoon chili powder, and salt and pepper to taste. Stir gently to combine.
  4. Cover the bowl loosely with a microwave-safe lid or plate. Microwave on high for 2 minutes, stir, then microwave for another 1-2 minutes until hot and steaming. Adjust time if your microwave wattage differs.
  5. Sprinkle 1/4 cup shredded cheese over the hot mixture and microwave uncovered for an additional 30 seconds to melt the cheese.
  6. Squeeze 1 teaspoon fresh lime juice over the bowl. Top with chopped green onions and cilantro if using. Stir gently before serving.

Notes

Use day-old rice for best texture. Drain beans well to avoid sogginess. Stir halfway through microwaving to ensure even heating. Cover loosely to trap steam but prevent sogginess. Adjust seasoning to taste. Add crushed tortilla chips on top before serving for extra crunch.
