  • 1 cup fresh spinach or lettuce leaves, washed and dried
  • Optional extras: thinly sliced red bell pepper, green onions, smoked paprika
  • Salt and pepper to taste
  • Optional: garlic powder or Italian seasoning

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for about 15 minutes.
  2. Lay an 8-inch tortilla flat on a clean cutting board.
  3. Spread about 2 tablespoons (30 g) of cream cheese evenly over the tortilla, leaving a half-inch border around the edges.
  4. Layer about 2 ounces (56 g) of thinly sliced deli meat evenly on top of the cream cheese, overlapping slices slightly.
  5. Sprinkle 1/4 cup (25 g) shredded cheese over the meat.
  6. Add a handful (about 1/4 cup or 10 g) of fresh spinach or lettuce leaves evenly. Add optional extras if desired.
  7. Season lightly with salt, pepper, and optional garlic powder or Italian seasoning.
  8. Roll the tortilla tightly but gently from one edge to the other to avoid tearing and keep fillings snug.
  9. Wrap the rollup tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes.
  10. Remove the wrap and slice the roll into 1/2-inch (1.3 cm) thick pinwheels using a sharp serrated knife.
  11. Arrange pinwheels on a serving platter.
