Ingredients

Scale
  • 1 loaf (about 16 ounces) day-old brioche or challah bread, cut into 1-inch cubes
  • 1 can (15 ounces) pumpkin puree (not pumpkin pie filling)
  • 6 large eggs, room temperature
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • ¾ cup brown sugar, packed
  • 2 teaspoons vanilla extract
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • ½ cup brown sugar, packed
  • ½ cup old-fashioned oats
  • 1 teaspoon pumpkin pie spice
  • 6 tablespoons cold unsalted butter, cubed
  • ½ cup chopped pecans (optional)
  • Maple syrup, for serving
  • Powdered sugar, for serving
  • Whipped cream or Greek yogurt, for serving

Instructions

  1. Cut the bread into 1-inch cubes. If using fresh bread, spread on a baking sheet and dry in a 300°F oven for 5-7 minutes.
  2. In a large mixing bowl, whisk together pumpkin puree, eggs, milk, heavy cream, brown sugar, vanilla extract, pumpkin pie spice, and salt until smooth and sugar is dissolved.
  3. Place bread cubes in a greased 9×13-inch baking dish. Pour custard evenly over the bread, pressing gently to ensure all cubes are soaked.
  4. Cover with plastic wrap and let soak at room temperature for 30 minutes, or refrigerate for 2-4 hours or overnight.
  5. In a medium bowl, combine flour, brown sugar, oats, and pumpkin pie spice. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs. Stir in pecans if using. Refrigerate until ready to use.
  6. Preheat oven to 350°F. Remove plastic wrap and sprinkle streusel topping evenly over the casserole.
  7. Bake for 45-55 minutes, until puffed, golden brown, and set in the center (internal temperature 165°F). If top browns too quickly, tent with foil.
  8. Let rest for 10-15 minutes before serving. Serve warm with maple syrup, powdered sugar, and whipped cream or Greek yogurt.

Notes

For best results, use day-old bread and let the casserole soak overnight. A water bath can be used for extra creaminess. Leftovers keep for up to 4 days in the refrigerator or freeze for up to 3 months.
