A quick and hearty breakfast casserole featuring everything bagels, eggs, cream cheese, and a savory seasoning blend, perfect for busy mornings and family brunches.

Ingredients

Scale
  • 45 everything bagels, cubed into roughly 1-inch pieces (day-old or slightly stale)
  • 8 large eggs, room temperature
  • 2 cups (480 ml) whole milk or half-and-half
  • 4 ounces (110 grams) cream cheese, cut into small cubes
  • 1 ½ cups (about 170 grams) shredded sharp cheddar or cheddar and Monterey Jack blend
  • 2 tablespoons everything bagel seasoning, plus extra for sprinkling
  • 3 green onions, thinly sliced
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • Butter or nonstick spray for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C). Butter or spray your 9×13-inch baking dish liberally to prevent sticking and help the edges crisp up.
  2. Cube the everything bagels into roughly 1-inch pieces. Toss the cubes in a large bowl with 2 tablespoons of everything bagel seasoning, ensuring each piece is nicely coated.
  3. In a separate large bowl, whisk together 8 large eggs and 2 cups (480 ml) of milk or half-and-half. Add ½ teaspoon garlic powder, salt, and pepper to taste. Whisk for about 1-2 minutes to incorporate air for fluffiness.
  4. Fold in the cream cheese cubes and shredded cheese.
  5. Add the everything bagel cubes and sliced green onions to the egg mixture. Gently fold everything together with a rubber spatula, making sure bagel pieces are coated but not falling apart.
  6. Pour the entire mixture into your prepared baking dish. Spread it out evenly and sprinkle a little extra everything bagel seasoning on top for a golden, flavorful crust.
  7. Bake uncovered for 35-40 minutes. The casserole should puff up, turn golden on top, and a knife inserted in the center should come out clean. If the top browns too fast, loosely tent with foil for the last 10 minutes.
  8. Let it rest for 5-10 minutes before cutting to help the custard set and make serving easier.

Notes

Use slightly stale bagels for best texture. Room temperature eggs and milk help avoid curdling. Don’t overmix to keep bread pieces intact. Adjust salt carefully due to salty seasoning. Assemble the night before and refrigerate for a quick morning bake. If too wet, reduce milk slightly or bake longer. Cover with foil if top browns too fast.
