These Easy Turkey and Cheese Lunch Box Roll-Ups are a kid-friendly, 10-minute recipe that uses simple ingredients like turkey, cheese, and tortillas with a secret cream cheese spread to keep them from unrolling. Perfect for school lunches, snacks, and picnics, they’re endlessly customizable and always a hit.

Ingredients

Scale
  • 45 slices deli-style turkey breast (oven-roasted or honey-smoked)
  • 12 slices cheese (American, cheddar, provolone, Swiss, or pepper jack)
  • 1 (8-inch) flour tortilla (Mission brand recommended)
  • 2 tablespoons cream cheese, softened (Philadelphia brand recommended)
  • Optional: lettuce leaves, thinly sliced cucumber, shredded carrots, honey mustard, or ranch dressing

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 10 minutes before starting, or microwave for 10 seconds until spreadable but not runny.
  2. Warm the tortilla: Microwave tortilla for 15 seconds, or warm in a dry skillet for 10 seconds per side, until pliable.
  3. Spread cream cheese: Lay warm tortilla flat on a cutting board. Spread a thin, even layer of cream cheese over the entire surface, all the way to the edges.
  4. Layer turkey: Place 4-5 slices of turkey flat on the cream cheese, overlapping slightly to cover without gaps.
  5. Add cheese: Lay 1-2 slices of cheese on top of the turkey, overlapping if needed.
  6. Add optional extras: If using, add lettuce, cucumber, or other veggies in a single layer. Do not overstuff.
  7. Roll up: Starting at one edge, roll the tortilla tightly toward the other edge, keeping filling tucked in. Press down gently to seal the seam.
  8. Wrap and chill: Wrap rolled tortilla tightly in plastic wrap or beeswax wrap. Refrigerate for at least 10 minutes to set.
  9. Slice into pinwheels: Using a sharp serrated knife, slice into 1-inch pieces (about 6-8 per tortilla) using a gentle sawing motion.
  10. Pack and serve: Place pinwheels in an airtight container. Serve cold or at room temperature. Add an ice pack for lunchboxes.

Notes

The cream cheese layer is the secret to keeping roll-ups from unrolling and adding moisture. Warm tortillas are essential to prevent cracking. For best results, chill the rolled tortilla for at least 10 minutes before slicing. These taste even better the next day as flavors meld. Avoid overstuffing to prevent bursting. If adding lettuce or cucumber, add just before serving to prevent sogginess. For make-ahead, skip fresh veggies if storing more than 24 hours.
