Easy Turkey and Cheese Pinwheels Recipe for Quick Lunchbox Snacks

A quick and easy recipe for turkey and cheese pinwheels that are perfect for lunchboxes and snacks. These bite-sized rolls combine turkey, cheddar cheese, and optional spreads wrapped in soft tortillas.

  • Flour tortillas (8-inch size works best for rolling and slicing)
  • 68 slices deli turkey (Boar’s Head preferred)
  • 1 cup shredded or thinly sliced cheddar cheese (sharp or mild)
  • 2 tablespoons softened cream cheese (optional)
  • 1 tablespoon mayonnaise (optional)
  • 1 teaspoon Dijon mustard (optional)
  • A handful fresh spinach or lettuce leaves
  • Salt and pepper to taste

Instructions

  1. In a small mixing bowl, combine softened cream cheese, mayonnaise, and Dijon mustard (if using). Stir until smooth and season lightly with salt and pepper.
  2. Warm each tortilla for 10-15 seconds in the microwave or use a tortilla warmer to make them flexible.
  3. Lay a tortilla flat on a cutting board. Spread a thin, even layer of the cream cheese mixture over the surface, leaving about half an inch at the edge free.
  4. Place 3-4 slices of turkey evenly over the cream cheese, then sprinkle or layer shredded cheddar cheese. Add fresh spinach or lettuce leaves on top.
  5. Starting from one edge, roll the tortilla tightly but gently to avoid squeezing out the fillings.
  6. Using a sharp serrated knife, cut the roll into 1 to 1.5-inch slices to make 6-8 pinwheels per tortilla.
  7. Arrange pinwheels on a plate or pack into lunch containers immediately. Cover with plastic wrap or store in an airtight container if packing ahead.

Notes

Warm tortillas briefly to prevent cracking when rolling. Use a serrated knife to cut pinwheels cleanly without squishing the filling. Keep the spread thin and even to avoid heavy or sloppy rolls. Overfilling can cause the tortilla to tear. Prepare spread and ingredients the night before to save time in the morning. Store pinwheels in an airtight container and refrigerate for up to 2 days. Reheat briefly if desired but they are best served chilled or at room temperature.
