  • Salt and pepper to taste
  • 2 cups cooked quinoa, brown rice, or farro (about 1 cup dry)
  • 1 cup vegetable or chicken broth (for cooking grains)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 cup shredded carrots
  • 1 cup steamed green beans or steamed broccoli florets
  • 3 tablespoons olive oil (for dressing)
  • 1 tablespoon fresh lemon juice or apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste (for dressing)
  • Optional toppings: chopped fresh herbs (parsley, cilantro, or basil), crumbled feta or goat cheese, toasted nuts or seeds (pumpkin seeds or sliced almonds)

Instructions

  1. Marinate the chicken: In a medium bowl, whisk together 2 tablespoons olive oil, minced garlic, smoked paprika, cumin, chili powder, salt, and pepper. Add chicken breasts or thighs and coat well. Let marinate at room temperature for 20 minutes, or cover and refrigerate for up to 2 hours.
  2. Cook the grains: Rinse 1 cup dry quinoa (or your choice of grain) under cold water. In a medium saucepan, bring 2 cups broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and fluff with a fork. Let cool slightly.
  3. Prepare vegetables: While grains cook, halve cherry tomatoes, dice cucumber, shred carrots, and steam green beans or broccoli until just tender (about 4-5 minutes). Drain and let cool.
  4. Grill the chicken: Preheat grill or grill pan to medium-high heat. Place chicken on grill and cook for 5-7 minutes per side, until internal temperature reaches 165°F (74°C). Avoid flipping too often to get a nice char. Remove from heat and let rest for 5 minutes, then slice into strips or bite-sized pieces.
  5. Make the dressing: In a small bowl, whisk 3 tablespoons olive oil, lemon juice or vinegar, Dijon mustard, honey, and a pinch of salt and pepper until emulsified.
  6. Assemble the bowls: In meal prep containers, layer grains, veggies, and grilled chicken. Drizzle dressing over each container or pack separately to keep things fresh. Add optional toppings if desired.
  7. Store and serve: Cover and refrigerate. Reheat gently in the microwave for 1-2 minutes or enjoy cold. Toss dressing again before serving if it settles.

Notes

Pat chicken dry before marinating to ensure good char. Marinate at least 20 minutes but no longer than 4 hours to avoid mushy texture. Use broth instead of water for cooking grains to boost flavor. Keep dressing separate until serving to maintain veggie crunch. Reheat in short bursts and add a splash of water or broth if grains seem dry.
