  • ⅓ cup honey
  • 3 tbsp sriracha sauce
  • 2 tbsp soy sauce (low sodium preferred)

  • 1 tsp minced garlic
  • 1 tsp grated fresh ginger (optional)
  • Salt and pepper, to taste
  • 810 wooden or metal skewers (if wooden, soak in water for 30 minutes)
  • Optional garnishes: chopped green onions, sesame seeds, lime wedges

Instructions

  1. Rinse and pat dry the chicken breasts, then cut into even 1-inch cubes.
  2. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth. Adjust seasoning to taste.
  3. Place chicken cubes in a medium bowl, pour half of the glaze over them, and toss gently to coat. Cover and refrigerate for at least 30 minutes, up to 2 hours.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated chicken cubes onto the skewers, leaving space between pieces.
  5. Preheat grill to medium-high heat (about 400°F). Clean and oil grates lightly.
  6. Grill the skewers for 4-5 minutes per side, turning carefully. During the last few minutes, brush remaining glaze onto the chicken to create a sticky, caramelized finish. Cook until internal temperature reaches 165°F.
  7. Remove skewers from grill and let rest for 3-5 minutes. Garnish with chopped green onions, sesame seeds, and a squeeze of lime before serving.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Marinate chicken for at least 30 minutes but no longer than 2 hours to avoid mushy texture. Use medium-high heat to avoid burning the glaze. Brush glaze on during the last few minutes of grilling for a sticky caramelized finish. Rest skewers after grilling to lock in juices.
