  • 1 cup fresh pineapple chunks or drained canned pineapple
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon salt
  • 810 wooden or metal skewers

Instructions

  1. Prepare the marinade by whisking together honey, soy sauce, olive oil, lime juice, minced garlic, crushed red pepper flakes (if using), black pepper, and salt in a medium bowl.
  2. Cut chicken thighs into 1.5-inch pieces and pineapple into chunks of similar size. Drain canned pineapple well if using.
  3. Place chicken pieces in the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, ideally 1 hour.
  4. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  5. Thread chicken pieces and pineapple chunks alternately onto the skewers, fitting 4-5 pieces of each per skewer with space between pieces.
  6. Preheat grill to medium-high heat (375-400°F). Clean and oil the grates.
  7. Grill skewers for 12-15 minutes, turning every 3-4 minutes until chicken reaches 165°F internal temperature and pineapple is caramelized.
  8. Remove skewers from grill and let rest for 5 minutes before serving. Optionally, garnish with fresh lime juice or chopped cilantro.
