Flavorful Roasted Hatch Green Chile Smash Burger Recipe with Easy Chipotle Aioli

  • 1 pound (450 g) ground beef (80/20 blend)
  • 23 medium-sized roasted Hatch green chiles, peeled and roughly chopped
  • 4 soft brioche buns or potato rolls, lightly toasted
  • 4 slices pepper jack or sharp cheddar cheese
  • Chipotle Aioli:
  • ½ cup (120 ml) mayonnaise (full-fat preferred)
  • 12 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 tablespoon (15 ml) fresh lime juice
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Thinly sliced red or white onions
  • Crisp leaf or romaine lettuce
  • Thick slices of ripe tomato
  • Dill pickle slices
  • 2 tablespoons (30 g) unsalted butter, softened (for toasting buns)

Instructions

  1. Preheat broiler or grill. Roast whole Hatch green chiles on a baking sheet or grill grates, turning occasionally, until skin is blistered and blackened (10-15 minutes broiler or 15-20 minutes grill). Transfer to a bowl and cover with plastic wrap to steam for 10 minutes.
  2. Peel the charred skin off the chiles, remove seeds if desired, and roughly chop the flesh.
  3. In a small bowl, whisk together mayonnaise, minced chipotle peppers, lime juice, minced garlic, salt, and pepper to make chipotle aioli. Chill until ready to use.
  4. Divide ground beef into 4 equal portions (~4 oz each). Roll lightly into balls without overworking the meat.
  5. Heat a skillet or griddle over medium heat. Spread softened butter on cut sides of buns and toast until golden and crisp. Set aside.
  6. Preheat cast iron skillet or griddle over medium-high heat until very hot. Place one beef ball on skillet and immediately smash down firmly with spatula to about ¼ inch thick. Cook undisturbed for 2-3 minutes until edges are crisp and browned. Flip carefully, place a slice of cheese on patty, and cook another 1-2 minutes until cheese melts and burger is cooked through but juicy. Repeat for all patties.
  7. Assemble burgers by spreading chipotle aioli on bottom bun, adding smashed burger with melted cheese, then topping with chopped roasted Hatch chiles, sliced onions, lettuce, tomato, and pickles. Cap with toasted top bun.
  8. Serve immediately while hot.

Notes

Do not press down on patties after flipping to retain juices. Use a very hot pan for a crispy crust. Roast and steam chiles to loosen skin for easy peeling. Chipotle aioli tastes better after resting a few hours in the fridge. Leftovers keep well refrigerated for up to 2 days; reheat gently in skillet or oven. For gluten-free, use lettuce wraps or gluten-free buns. For dairy-free, substitute vegan mayo and omit cheese or use dairy-free cheese.
