  • 6 bone-in, skin-on chicken thighs
  • 1/2 cup (75 g) chopped sun-dried tomatoes packed in oil (drain excess oil)
  • 1 cup (240 ml) dry white wine (e.g., Pinot Grigio or Sauvignon Blanc)
  • 4 cloves garlic, minced
  • 1 medium yellow or sweet onion, sliced thin
  • 1 cup (240 ml) low sodium chicken broth
  • 1 teaspoon Italian seasoning
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 1/4 cup (60 ml) heavy cream or half-and-half

Instructions

  1. Pat chicken thighs dry with paper towels and season both sides generously with salt and pepper. (10 minutes)
  2. Heat olive oil in a cast iron skillet over medium-high heat. Add chicken thighs skin-side down and cook without moving for 4-5 minutes until skin is golden and crisp. Flip and sear the other side for 3 minutes. Remove and set aside. (10 minutes)
  3. In the same skillet, reduce heat to medium. Add sliced onion and minced garlic. Cook until softened and fragrant, about 3-4 minutes. (5 minutes)
  4. Pour in white wine and chicken broth. Scrape browned bits from the pan bottom with a wooden spoon. Stir in Italian seasoning and chopped sun-dried tomatoes. Let simmer for 2 minutes. (5 minutes)
  5. Place seared chicken thighs in the crockpot in a single layer. Pour the wine and tomato mixture with onions and garlic evenly over the chicken. (5 minutes)
  6. Cover and cook on low for 4 hours or on high for 2.5 hours until chicken is tender and easily pulls away from the bone.
  7. If desired, stir in heavy cream or half-and-half in the last 10 minutes of cooking. Taste and adjust salt and pepper as needed. (10 minutes)
  8. Serve chicken and sauce over cooked pasta, polenta, or crusty bread.

Notes

Searing chicken skin-side down first is essential for crispy texture and flavor. Use bone-in thighs for juiciness. If sauce is too thin after cooking, remove chicken and simmer sauce on stovetop for 5 minutes to thicken before returning chicken. For dairy-free, omit cream or use coconut cream. Can prepare searing and sauce the night before and slow cook next day.
