  • 4 ounces smoked turkey or ham slices (deli meat), thinly sliced
  • 1 cup baby spinach or arugula leaves (about 30 g / 1 oz)
  • 6 cherry tomatoes, thinly sliced (optional)
  • Seedless grapes (red and green) for fruit skewers
  • 8 strawberries, hulled and halved
  • 1 cup pineapple chunks (fresh or canned, drained) (about 165 g / 5.8 oz)
  • Blueberries for fruit skewers
  • Wooden or reusable skewers
  • Salt and pepper, to taste
  • Lemon juice (a splash, optional to keep fruit fresh)
  • Optional: honey or light fruit glaze for the skewers

Instructions

  1. In a small bowl, combine 4 ounces (115 g) of softened cream cheese with 1 teaspoon of Dijon mustard. Mix until smooth and creamy.
  2. Take 8 slices of whole wheat sandwich bread. Remove the crusts carefully with a sharp knife. Cut each slice into quarters to create mini sandwiches.
  3. Thinly slice half a cucumber (about 75 g), 6 cherry tomatoes, and prepare 4 ounces (115 g) of smoked turkey or ham. Wash and dry 1 cup (30 g) of baby spinach or arugula leaves.
  4. Spread a generous layer of the cream cheese mixture on each mini bread square. Layer with cucumber slices, deli meat, leafy greens, and a slice of tomato if using. Lightly season with salt and pepper. Top with another bread square to make a sandwich.
  5. Wash and dry all fruit. Hull and halve 8 strawberries, cut pineapple into bite-sized chunks (about 1 cup or 165 g), and pick through grapes and blueberries to remove any stems. Thread the fruit onto skewers in an alternating pattern—grape, strawberry half, pineapple, blueberry.
  6. Place mini sandwiches neatly in one compartment of your bento box or container. Arrange fruit skewers in a separate section to keep flavors fresh and prevent sogginess. If packing in advance, lightly brush fruit with a splash of lemon juice.
  7. Optionally, add a small container of your favorite dip (like hummus or ranch) or a sprinkle of fresh herbs on the sandwiches. Seal your box and keep refrigerated until ready to eat.
