These Fresh Cucumber Dill Tea Sandwiches combine crisp cucumber slices with a creamy dill-infused cream cheese spread, making a light, refreshing snack perfect for tea time or casual gatherings.

Ingredients

Scale
  • 8 slices white or whole wheat sandwich bread, crusts removed
  • 8 ounces softened cream cheese
  • 2 tablespoons fresh dill, finely chopped
  • 1 English cucumber, thinly sliced (about 1/8 inch thick)
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • Optional: garlic powder or onion powder, to taste

Instructions

  1. Rinse the English cucumber and slice very thinly using a knife or mandoline (about 1/8 inch thickness). Place slices on paper towels to absorb excess moisture.
  2. In a medium bowl, combine softened cream cheese, chopped fresh dill, lemon juice, salt, black pepper, and optional garlic or onion powder. Mix until smooth and evenly blended.
  3. Lay out sandwich bread slices and trim off the crusts carefully.
  4. Spread a generous layer of the dill cream cheese mixture evenly over each slice of bread.
  5. Arrange cucumber slices over half of the bread slices, overlapping slightly but not piling thick.
  6. Top with the remaining bread slices, cream cheese side down, and press gently to adhere.
  7. Cut each sandwich into quarters (triangles or rectangles) and arrange on a serving platter.
  8. Optional: Chill sandwiches in the refrigerator for 10-15 minutes before serving to allow flavors to meld and bread to firm up.

Notes

Pat cucumber slices dry to prevent soggy sandwiches. Use softened cream cheese for easy spreading. Chill sandwiches before serving for best flavor and texture. Can prepare a few hours ahead and keep refrigerated. For dairy-free, use plant-based cream cheese and gluten-free bread if needed.
