A vibrant and refreshing summer drink combining crisp cucumber, fresh mint, lime juice, and a touch of sweetness. Perfect for hot days and easy to make in under 15 minutes.

  • 2 large English cucumbers (about 1 lb), peeled and chopped
  • 1 cup fresh mint leaves (loosely packed, about 15g), rinsed
  • 4 cups (32 fl oz) cold filtered water
  • Juice of 1 medium lime (about 2 tablespoons)
  • 2 to 3 tablespoons simple syrup or honey, adjusted to taste
  • A pinch (about 1/8 teaspoon) fine sea salt

Instructions

  1. Peel and roughly chop 2 large English cucumbers into 1-2 inch chunks.
  2. Rinse about 1 cup of fresh mint leaves and gently bruise them with your fingers to release aroma without chopping too finely.
  3. Add cucumber chunks, bruised mint, 4 cups cold water, lime juice, 2 tablespoons simple syrup, and a pinch of sea salt into a blender. Blend on high for 45 seconds to 1 minute until smooth but not completely pulverized.
  4. Pour the blended mixture through a fine mesh sieve or cheesecloth into a pitcher to remove pulp. Press the pulp gently with the back of a spoon to extract extra juice.
  5. Taste and adjust sweetness or lime juice as desired. Stir well and chill in the refrigerator for at least 30 minutes.
  6. Serve over ice, garnished with a sprig of fresh mint or a thin cucumber slice.

Notes

Do not overblend the mint to avoid bitterness; gently bruise leaves instead. Straining is key for a smooth texture. Adjust sweetness gradually to avoid over-sweetening. Chill for at least 30 minutes for best flavor. Can substitute sparkling water for a fizzy twist.
