A quick and easy frozen yogurt bark featuring creamy Greek yogurt, fresh berries, and crunchy granola. This refreshing snack is perfect for busy days and customizable to your taste.

Ingredients

  • 2 cups (475 ml) Greek yogurt (full-fat or low-fat, plain or vanilla-flavored)
  • 2 tablespoons (30 ml) honey (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 grams) mixed berries (fresh or frozen; blueberries, strawberries, raspberries, blackberries)
  • 1/2 cup (50 grams) granola (choose your favorite type)
  • 1 tablespoon (15 grams) chia seeds (optional)

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir until smooth and well combined.
  3. Pour the yogurt mixture onto the lined tray and spread evenly to about 1/4 inch (6 mm) thickness using a spatula or spoon.
  4. Scatter mixed berries evenly over the yogurt, then sprinkle granola and chia seeds (if using) on top.
  5. Place the tray in the freezer and freeze for at least 3 hours or until completely firm (overnight recommended).
  6. Remove the frozen bark from the tray by lifting the parchment paper or silicone mat and break into irregular pieces about 2 to 3 inches (5 to 7.5 cm) each.
  7. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

Use a consistent 1/4 inch thickness for best freezing results. Substitute honey with maple syrup or agave for vegan option. Use dairy-free yogurt for dairy-free version. Layer pieces with parchment paper when storing to prevent sticking. Avoid overloading berries to prevent sogginess.
