  • 1 large English cucumber, peeled and diced
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1 to 1.5 teaspoons Tajin seasoning (adjust to taste)
  • A handful fresh mint leaves, chopped (optional)
  • A small handful fresh cilantro, chopped (optional)
  • Pinch of salt
  • 1 tablespoon olive oil (optional)

Instructions

  1. Cut about 4 cups of watermelon into bite-sized 1-inch cubes, removing any seeds.
  2. Peel the cucumber if needed and dice into 1-inch cubes.
  3. Finely chop fresh mint and cilantro leaves.
  4. In a small bowl, combine lime juice and Tajin seasoning; stir until slightly dissolved.
  5. In a mixing bowl, gently combine watermelon, cucumber, and herbs.
  6. Drizzle the lime-Tajin dressing and olive oil over the salad; add a pinch of salt.
  7. Toss gently to coat without bruising the fruit.
  8. Let the salad rest for 5-10 minutes at room temperature before serving for best flavor (optional).

Notes

Use ripe watermelon for best sweetness. Handle watermelon gently to avoid mushiness. Add dressing just before serving if prepping ahead to prevent sogginess. Tajin seasoning can be substituted with chili powder, salt, and lime zest if unavailable. Optional herbs and olive oil add flavor depth.
