  • 1 tablespoon honey
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt

Instructions

  1. Cut about 4 cups of watermelon into bite-sized cubes, roughly 1-inch pieces, removing the rind carefully.
  2. Peel cucumbers if desired and slice into thin half-moon slices about ¼ inch thick.
  3. If using, thinly slice about ¼ cup red onion and soak in cold water for 5 minutes to mellow sharpness (optional).
  4. In a small bowl or jar, combine 3 tablespoons fresh lime juice, 1 tablespoon honey, 2 tablespoons extra virgin olive oil, and ¼ cup finely chopped fresh mint leaves. Whisk or shake vigorously until well blended. Season with ½ teaspoon salt and freshly ground black pepper to taste.
  5. In a large mixing bowl, gently combine watermelon, cucumber, crumbled feta, and optional red onion slices.
  6. Pour the mint-lime dressing over the salad and toss carefully to coat without breaking up the watermelon.
  7. Taste and adjust salt or lime juice if needed. Add a pinch of chili flakes for subtle heat if desired.
  8. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld. Drain excess liquid before serving if needed.
