Fresh Watermelon Feta Mint Salad Recipe with Easy Zesty Lime Dressing

A refreshing summer salad combining sweet watermelon, tangy feta, and fresh mint with a zesty lime dressing. Quick and easy to prepare, perfect for warm-weather meals and gatherings.

  • 4 cups (600 grams) seedless watermelon, cut into 1-inch cubes
  • 1 cup (150 grams) crumbled feta cheese
  • 1/4 cup (15 grams) fresh mint leaves, roughly chopped
  • 3 tablespoons (45 ml) freshly squeezed lime juice (from 2 medium limes)
  • 2 tablespoons (30 ml) extra virgin olive oil
  • 1 teaspoon (7 grams) honey
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • Optional: thinly sliced red onion
  • Optional: toasted pine nuts or chopped pistachios

Instructions

  1. Cut the seedless watermelon into 1-inch cubes (about 4 cups or 600 grams) and place in a large mixing bowl.
  2. Add 1 cup (150 grams) of crumbled feta cheese on top of the watermelon.
  3. Roughly chop about 1/4 cup (15 grams) of fresh mint leaves and sprinkle evenly over the watermelon and feta.
  4. In a small bowl or jar, whisk together freshly squeezed lime juice (3 tablespoons), extra virgin olive oil (2 tablespoons), honey (1 teaspoon), and a pinch of salt and freshly cracked black pepper to taste until well combined.
  5. Pour the lime dressing over the watermelon, feta, and mint mixture. Gently toss using salad servers or a large spoon to coat the ingredients without breaking the watermelon cubes.
  6. If using, add thinly sliced red onion or toasted pine nuts now and toss lightly again.
  7. Serve immediately or chill for up to 1 hour before serving. If chilled, add nuts last to keep them crunchy and toss gently before serving.

Notes

Use firm, ripe watermelon to avoid sogginess. Use fresh lime juice for best flavor. Gently toss to avoid breaking watermelon cubes. Prepare and toss salad just before serving for best texture. Dressing can be made ahead and stored up to 2 days. Store leftovers in airtight container up to 24 hours; drain excess liquid before serving again.
