  • Seedless, firm watermelon, cut into 1-inch cubes
  • 8 oz (225 g) block feta cheese, cut into 1-inch cubes or crumbled
  • 2025 fresh mint leaves, washed and patted dry
  • 1 tablespoon extra virgin olive oil
  • 12 tablespoons balsamic glaze (optional)
  • Freshly ground black pepper, a pinch
  • Sea salt, a light sprinkle if needed
  • About 12 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Cut the seedless watermelon into 1-inch cubes, ensuring uniform size and firmness.
  2. Slice the feta block into 1-inch cubes or crumble into chunks if preferred.
  3. Rinse and gently pat dry the fresh mint leaves. Toss them lightly in a mixing bowl with the tablespoon of extra virgin olive oil to coat evenly.
  4. Assemble the skewers by threading a watermelon cube, a folded mint leaf, and a feta cube, repeating until the skewer is full (3-4 pieces per skewer). Arrange skewers on a serving platter.
  5. Lightly sprinkle freshly ground black pepper over the skewers and add a tiny pinch of sea salt if needed.
  6. Drizzle the skewers gently with balsamic glaze, being careful not to overwhelm the flavors.
  7. Chill the platter in the refrigerator for about 10 minutes before serving to let flavors marry and keep cool.

Keep watermelon and feta cold before assembly to maintain freshness and texture. Soak wooden skewers in water for 30 minutes if grilling. Assemble skewers just before serving to keep mint fresh. Light drizzle of balsamic glaze is enough; avoid over-dressing.
