A refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a zesty lime dressing. Perfect for quick lunches, potlucks, or as a light side dish.

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, finely chopped
  • Juice of 2 medium limes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • Pinch of salt
  • Freshly ground black pepper, a light sprinkle (optional)

Instructions

  1. Wash the watermelon thoroughly. Slice off the rind and cut the flesh into roughly 1-inch cubes.
  2. Rinse fresh mint leaves, pat dry, remove from stems, and finely chop to measure about 1/4 cup.
  3. In a small bowl, whisk together lime juice, extra virgin olive oil, honey, salt, and black pepper until honey dissolves and ingredients blend.
  4. In a medium mixing bowl, combine watermelon cubes, crumbled feta, and chopped mint. Pour the lime dressing over and gently toss to coat evenly without mashing the watermelon.
  5. Taste and adjust seasoning with extra salt or lime juice if desired. Toss gently again.
  6. Serve immediately or chill in the refrigerator for 15-20 minutes to let flavors meld.

Notes

Use firm, ripe watermelon to avoid sogginess. Crumble feta by hand and pat dry to keep salad fresh. Whisk dressing well to create a smooth emulsion. Toss gently to maintain watermelon texture. Can be made dairy-free by substituting feta with vegan queso fresco or firm tofu crumbles. Serve chilled or at room temperature. Best eaten within 24 hours.
