A bright, fresh, and easy-to-make summer salad combining sweet corn, tangy lime, and salty feta with crisp herbs and a zesty dressing.

Ingredients

Scale
  • 4 cups fresh corn kernels (about 4 ears)
  • 1 cup crumbled feta cheese
  • Juice and zest of 2 medium limes
  • 1 medium red bell pepper, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped (or parsley as a substitute)
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey or agave nectar
  • Salt and black pepper to taste

Instructions

  1. Shuck the corn and remove kernels from about 4 ears by standing the cob upright and slicing downwards with a sharp knife to get about 4 cups of kernels.
  2. Finely dice the red bell pepper and red onion. Chop the cilantro and jalapeño if using.
  3. In a small bowl, whisk together lime juice and zest, olive oil, honey or agave nectar, salt, and pepper to make the dressing.
  4. In a large mixing bowl, combine corn kernels, diced red bell pepper, red onion, cilantro, jalapeño, and crumbled feta.
  5. Pour the lime dressing over the salad ingredients and gently fold with a spatula or wooden spoon to keep feta in chunks and coat everything evenly.
  6. Let the salad rest at room temperature for about 10 minutes before serving to allow flavors to meld. Refrigerate up to 2 hours if preparing ahead, then bring to room temperature before serving.

Notes

Use fresh corn for best sweetness and texture. Lime zest adds extra citrus punch. Toss gently to keep feta chunks intact. Can grill corn for smoky flavor. Add toasted pepitas or nuts for crunch. Salad can be made ahead and chilled, but bring to room temp before serving for best flavor.
