Frozen Peach Bellini Slushies

A refreshing and sophisticated frozen peach drink combining ripe peaches and sparkling wine for a perfect summer treat with icy texture and bubbly fizz.

  • 3 medium fresh peaches, peeled and sliced (or frozen peaches)
  • 750 ml sparkling wine (brut or extra dry, Prosecco recommended)
  • 2 tablespoons granulated sugar (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 2 cups ice cubes, crushed or regular
  • 1 ounce peach schnapps (optional)

Instructions

  1. Peel and slice about 3 medium ripe peaches. To peel easily, blanch peaches in boiling water for 30 seconds, then transfer to ice water; skins will slip off. Slice into chunks and set aside.
  2. Add peaches, 2 tablespoons sugar, and 1 tablespoon fresh lemon juice to a blender. Blend on high until smooth but still thick, about 30 seconds to 1 minute. For a finer texture, strain the puree through a fine mesh sieve.
  3. Pour in about 2 cups of crushed or regular ice cubes. Pulse or blend until the ice is crushed and the mixture becomes slushy, stopping before it turns watery. The texture should be thick and icy.
  4. Taste the slushie base and add more sugar if needed, blending briefly again.
  5. If desired, blend in 1 ounce of peach schnapps for extra peach flavor.
  6. Chill the sparkling wine well before serving.
  7. Spoon the peach slushie into glasses about two-thirds full. Slowly pour 4-5 ounces (120-150 ml) of sparkling wine over the top. Serve immediately, garnished with a peach slice if desired.

Notes

Do not add sparkling wine until serving to keep bubbles alive. Pulse ice carefully to avoid watery texture. Store slushie base in freezer up to 2 days and scrape with a fork before serving. Use ripe but firm peaches for best texture. For non-alcoholic version, substitute sparkling water or lemon-lime soda for wine and omit schnapps.
