Instructions

  1. Preheat your oven to 350°F (175°C). Place a rack in the center of the oven. Have a 5-inch or 6-inch cast iron skillet ready.
  2. Melt 4 tablespoons unsalted butter in a microwave-safe bowl in 15-second bursts until just melted. Stir between bursts.
  3. Add 1/4 cup granulated sugar and 1/4 cup packed light brown sugar to the melted butter. Stir with a whisk or fork until smooth and combined.
  4. Add 1 large egg yolk and 1/2 teaspoon vanilla extract. Stir until fully incorporated and the mixture looks glossy and smooth.
  5. Sprinkle 1/2 cup all-purpose flour, 1/4 teaspoon baking soda, and 1/8 teaspoon salt over the wet mixture. Stir gently until just combined. Do not overmix.
  6. Fold in 1/3 cup chocolate chips with a few gentle strokes until evenly distributed.
  7. Press the dough into the ungreased skillet in an even layer, all the way to the edges.
  8. Bake for 12 to 15 minutes, until edges are golden brown and the center is set but still soft. For a gooey center, bake 12 minutes; for more set, 14-15 minutes.
  9. Remove from oven using oven mitts. Cool for 5 minutes on a wire rack or trivet.
  10. Top with vanilla ice cream and a sprinkle of flaky sea salt if desired. Serve straight from the skillet with two spoons.

Notes

Use room temperature egg yolk for smoother mixing. Do not overmix the dough to keep it tender. Let the cookie rest 5 minutes before serving to set properly. For a vegan version, use melted coconut oil or vegan butter, a flax egg (1 tbsp ground flaxseed + 2 tbsp water), and dairy-free chocolate chips.
