  • ¼ cup (45g) mini chocolate chips

  • 1 teaspoon (5ml) vanilla extract
  • ¼ teaspoon salt
  • Optional: shredded coconut, chopped nuts, dried fruit, or cocoa powder

Instructions

  1. In a large mixing bowl, combine 1 cup rolled oats, 2 tablespoons ground flaxseed, and ¼ teaspoon salt. Stir together until evenly distributed.
  2. Add ½ cup creamy peanut butter, ⅓ cup honey, and 1 teaspoon vanilla extract. Mix thoroughly with a spatula until no dry patches remain, about 1 minute. If too dry, add a teaspoon of water or more honey; if too wet, add a tablespoon of oats.
  3. Fold in ¼ cup mini chocolate chips gently so they don’t melt.
  4. Chill the mixture in the refrigerator for 10-15 minutes for easier rolling.
  5. Using a cookie scoop or tablespoon, portion out the mixture and roll into 1-inch balls. Lightly wet your fingers with cold water if the mixture sticks.
  6. Place the rolled bites on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to firm up before serving.

For best texture, use rolled oats instead of quick oats. Wet your hands with cold water to prevent sticking when rolling.
